Rainbow Smoothie: A color mashup of good nutrients

If you’re at all health-conscious or a juicer or eat a mostly plant-based diet, you probably know that it’s a good rule of thumb to eat or drink a rainbow of colorful plant foods each day so you get all the valuable nutrients your body needs.

So, today I looked around the kitchen and decided to make a smoothie that included foods of all the colors of the rainbow – and then some.

Here’s my Rainbow Smoothie recipe:

  • 1 cup frozen strawberries
  • 2 cups fresh-squeezed orange juice
  • 1 banana
  • 2 handsful of baby spinach
  • 1/4 cup broccoli sprouts
  • 1 cup frozen blueberries
  • 1 roasted beet
  • 2 T. ground flaxseed
  • 1 tsp. psyllium husks
  • 1/4 tsp. ground ginger
  • 2 cups plain organic soy milk

Put all ingredients in a blender/Vitamix and blend till smooth. Makes about 7 cups. Drink fresh. Store remainder in glass jars for next day.

It’s delicious and easy,  and it made for a great afternoon snack. I’ll have the remainder for breakfast tomorrow.
